    Fried chicken is a classic American picnic dish, made from cut up, seasoned chicken parts, coated in breading and either pan fried or deep fried. Fried chicken is enjoyed both hot and cold, sometimes with hot sauce or gravy. It is often lightly-crusted, and special considerations must be used if a cook wants an extra crispy skin. Using a proper cooking technique, and different cooking times for the different parts, you can make excellent fried chicken. Add this to my Recipe Box.


    • Marinate the chicken parts in buttermilk for at least four hours. This not only flavors the chicken and keeps it moist while cooking, but also helps the crust adhere.

    • Season the chicken with salt, pepper and other preferred spices like garlic powder and cayenne pepper, then dredge the parts in flour. Shake off the excess and dry on a cooling rack so the flour forms an initial crust.

    • Beat eggs together to form an egg wash, then prepare another flour dredge with seasoning, cornmeal and/or bread crumbs. Dredge the chicken parts again, then put back on the rack for the parts to form a crust.

    • Heat a heavy 12-inch skillet up halfway on medium-high with cooking oil. Pan frying gets a better crust than deep frying. Turn the parts halfway through cooking and drain thoroughly on the wire rack to make the crispy crust hard when the chicken finishes cooking.

    • Prepare the chicken as normal. The first for crispy fried chicken is to prepare your chicken as normal, by sprinkling each piece with salt, pepper, and sage, if desired. Meanwhile, preheat the skillet to medium heat, allowing the grease to slowly heat up, but not too hot.

    • Use the mustard bottle and a basting brush or bbq brush, that you can use to baste the chicken with. Dip the brush into the mustard and baste a thin coat onto front and back of each piece. For those of you that don't like mustard: The mustard taste is not present when the chicken is fully cooked.

    • Pour 1 1/2 cups of flour into a gallon size Ziploc bag. If you need more, you can always go back and add some. One by one, place each piece of prepared chicken into the bag and shake until coated with flour.

    • Add the chicken to the frying pan and cook. On the correct setting, a typical frying pan of chicken takes about 30 minutes. If it's cooked to fast, the middle will still be red.

    • Fill the pressure cooker with the 3 cups of canola oil and preheat at medium-high heat.

    • Prepare your chicken pieces by cutting and dredging in your flour mixture or batter, whichever your recipe calls for.

    • Check to find out if your pressure cooker is ready to fry. You can easily test it by dropping a little dry flour into the pressure cooker--if it starts sizzling, it is ready to fry your chicken.

    • Slowly place the chicken pieces into the pressure cooker. Fry just two pieces of chicken at a time to avoid overcrowding the chicken. Ensure the oil covers the chicken, then close the lid of the pressure cooker.

    • Fry chicken for about seven minutes for a chicken wing or chicken drumstick, about 10 minutes for a breast or thigh piece.

    • Shut off the heat of the pressure cooker, and slowly release the pressure through the top nozzle on your pressure cooker.

    • Open the lid once all the steam is released, and remove the chicken with kitchen tongs. Place on some paper towels on top of a plate to pull out some of the oils and grease from the chicken and let it cool slightly to eat.

    How to Make Fried Chicken With a Pressure Cooker

    Southern fried chicken is traditionally cooked in a cast iron skillet. However, in order to turn this Southern delicacy into a fast food item, Harland Sanders popularized a technique of pressure frying chicken which cooks the meat in 10 minutes instead of 30. Pressure cooked fried chicken will have a crisper coating and juicy and tender meat. Although household pressure cookers should not be operated with more than 1/4 cup of oil, frying the chicken pieces before finishing them in the pressure cooker will yield satisfying results.     • Pour the milk and hot sauce into a bowl and add the chicken pieces.

    • Place the flours, herbs, spices and salt into the zip top bag.

    • Seal the bag and shake it well to mix the ingredients.

    • Add the chicken pieces to the bag of seasoned flour and reseal the bag.

    • Shake the bag again to evenly coat the chicken pieces.

    • Add the oil to the pressure cooker and place the cooker pot over medium-high heat.

    • Add the chicken pieces to the hot oil. Do not place the pressure cooker's lid on the pot yet.

    • Brown the chicken on all sides in a skillet.

    • Remove the pressure cooker from the heat and carefully place the cooker's lid on and seal it firmly.

    • Place the sealed pressure cooker back onto the stove over medium heat until it comes up to pressure.

    • Reduce the heat to low and cook for 15 minutes.

    • Remove the pressure cooker from the stove and open the pressure valve.

    • Open the pressure cooker lid once all of the steam has escaped from the pot. Serve the fried chicken.
